HOMEMADE BRIOCHE HAMBURGER BUNS
Makes 4 buns
INGREDIENTS:
● 1/2 c. warm whole milk
● 1 tbsp. warm water
● 2 eggs
● 1 tsp. active dry yeast
● 1 tbsp. granulated sugar
● 1 egg
● 1 3/4 c. bread flour
● 1/2 tsp. kosher salt
● 1 1/2 tbsp. unsalted butter, room temperature
FOR THE TOPPING:
● 1 egg yolk

● 2 tbsp. sesame seeds (optional)
DIRECTIONS:
1) In a medium mixing bowl, whisk warm water, milk, yeast and sugar; then beat in the eggs.
2) Mix flours, salt and butter. Pour yeast mixture into the bowl and mix.
3) Put out on counter and knead for 10 minutes.
4) Let rise for 2 to 3 hours.
5) Line a baking sheet with parchment paper or a baking mat. Punch the dough down and divide the dough into 8 equal pieces (you can use a kitchen scale to be exact) .
6) Form into balls and place on baking sheet about 2 inches apart. Cover with a greased piece of plastic wrap. Rest in a warm place for 1 hour, or until puffy and slightly risen.
7) Preheat oven to 375 degrees.
8) To make the egg wash, in a small bowl, whisk the egg yolk with water. Brush generously on each bun, covering the entire surface, then sprinkle with sesame seeds, if desired.
9) Place the buns in the oven and bake for 15-18 minutes or until they turn a deep golden brown. Remove from the oven and allow to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
