TheB.A.R. and Grille has now expanded. They have installed a drive-thru window, and have also added a banquet facility to serve wedding parties. The functional structure was not working well. When a wedding party was using the facility, the regular customers complained that the service took too long. Also, the drive thru customers were a strain on the system since it was unpredictable when they would arrive. How would you restructure this restaurant? What would this look like?
